Easy to make Cream of Mushroom Soup!

In winter, I find there is nothing nicer then coming in from doing outside chores to a bowl of homemade soup. Especially if it's accompanied by a nice big heel or thick wedge of bread still warm from the oven. Definitely what I would call comfort food.

This Cream of Mushroom soup is one of my favorites. I tweaked it a bit over the years to not be filled with too many calories. The good parts of this recipe is that mushrooms are low in calories, almost zilch as a matter of fact, they have no cholesterol and are almost totally free of fat and sodium. They also possess essential minerals which our bodies all need more of. To give the soup the awesome creamy flavor and texture you need a certain amount of cream but if you're really strong and want to lower the calories even lower then they already are you can just replace the cream with milk or even skim milk, just add an extra dollop of plain yogurt (however this will slightly alter the taste... still yummy but just a little more acidic).

Ingredients:

This recipe will make 4-5 servings

  • 3/4 lb button or cimini mushrooms -- washed and sliced
  • 1/2 lb Shiitake, Oyster or Portabella mushrooms -- washed and sliced
  • 2 lg onions -- finely chopped
  • 2 cloves of garlic -- finely chopped
  • 3 cups chicken or vegetable broth
  • 1/2 cup of table cream
  • 1/2 cup of plain yogurt
  • 5 tablespoons of flour
  • 2 tablespoons of olive oil
  • 2 teaspoons chopped fresh basil (1/2 teaspoon dried)
  • 1 teaspoon chopped fresh thyme (1/4 teaspoon dried)
  • 1/4 teaspoon Tabasco (more if you like it spicy)
  • 1/2 teaspoon of salt
  • 1/4 teaspoon white pepper
  • chives or a green onion (finely chopped)(optional)

Methodology:

  • In a large saucepan slightly brown chopped onion and garlic in the olive oil
  • Stir in flour, keep stirring (using a whisk) once the flour is golden brown quickly add chicken broth (so as not to burn the flour) cook and stir until boiling
  • Add mushrooms once it all comes to a boil lower heat and let simmer covered for about 20 minutes, stirring occasionally
  • Carefully blend until smooth (only 1/3 at a time and remember the mixture is hot) return to saucepan
  • Stir in cream, yogurt herbs and spices
  • Heat while stirring until the soup is hot (remember not to let the soup get too hot as the cream and yogurt could curdle)
  • Add Tabasco sauce
  • Taste and adjust salt and pepper if necessary
  • Pour into bowls, sprinkle with chopped chives or green onions and serve with wedges of fresh bread, biscuits or crackers

Hello Greek, how are you? Always glad when you pop in for a visit. Coffee, Tea?

Let me know how you liked the soup. I'm having some of it today with fresh homemade sourdough bread (which is baking in the oven right now). I found the most gorgeous portabellas at the grocery store yesterday. Yum...isn't it silly to actually look forward to such a fairly simple dinner?

Al make sure you give the soup a trial because it really is good. We have a Japanese restaurant in the next town over and my friends and I eat there frequently. I know it's probably not quite as good as authentic but their okonomi yaki pancakes are to die for. I've never had deep fried lotus bulbs but I make curry rice at home all the time. I should put my recipe into a hub one day...

Talk about mushrooms!!! I ate all kinds of mushrooms during my 6 years in Japan, and I swear it is one of the things I miss the most(apart from Okonomiyaki, Kare rice and lotus bulbs deep fried). This is a great variation of the cream and it does sound yummy!

Habee, I have the canned soup in my cupboards all the time but I use them mainly on pasta dishes etc. I love, love, love the homemade soup. Hope you have a chance to try it sometimes.

I've heard of chocolate being included in chili and in emu stew but not in mushroom soup. Either way I might not try it as I'm possibly one of the few weird people in this world that does not care too much for chocolate. (except in a rum ball or a ganache filled truffle once a year)

This is a good recipe! But I say load up the calories and walk the dog for an extra block or two. I haven't done enough recipes with my burgeoning hub empire, but you gave me an idea. Most people are going to freak when they hear this, but do you know chocolate goes really well in a mushroom soup? I SWEAR! That's going on my list to put up soon.

Hi Sally, I know what you mean about mushrooms, no matter how they're prepared they're great. I have not tried soy milk for any cream soups but my friend uses a product called Lactaid (I'm sure its available in your neck of the woods too). He says its almost as good as using cream (he just found out last year that he's lactose intolerant and is still experimenting with changing his fave recipes around).

What a fabulous job of writing this recipe...I was salivating by the time I hit the basil in the ingredients list. I love mushrooms no matter how they are prepared, but I really miss cream of mushroom soup since I can't tolerate lactose. Zsuzsy, have you ever tried to make a cream soup recipe with soy milk?

Princessa, how are you? I don't get out into the forests for mushrooms hunting as much as I used to when I still had the big farm (1/3 of it was mixed bush). I really miss it but then I guess we can't have everything.

However last year I went out with a friend and we struck gold as the morele mushrooms were just starting. We came home with several pounds each. That's when I even made the cream of mushroom soup with some.

Sounds delicious. I enjoy going for a walk in the forest to collect mushrooms, usually I just cook them in an omelette or stir fried with garlic and white wine. My family enjoy having soups so I'll try this recipe, I am sure they are going to love it. For the children as long as it has plenty of cream they love it!

Hiya Springboard! Thanks for stopping by.

I use canned mushroom soup in a lot of sauces and pasta dishes but the homemade mushroom soup is too good and never lasts to add to other meals.

I think table cream has a bit less fat content than half and half but not enough to worry about. Half and half will work just as well. I was just talking to my daughter on the phone and she says she makes with half and half for her hubby. Don't hold me on this but if I remember right, full out whipping cream is usually 35%, half and half 18% and the table cream that I buy is only 12%.

It really is a tasty soup especially with the stronger tasting shiitake mushrooms. Mind you I make it with whatever kinds of mushrooms I happen to have in the house, even made it with morrells last year. Or just the plain button or white mushrooms if I don't have the fancies.

Love soups, and love hearty creamy ones—and of course, cream of mushroom is such a staple in my house (although mainly the canned variety) for so many dishes.

So, two questions. 1) would this soup be a good alternative to the canned variety for dishes calling for cream of mushroom soup. 2) hope I don't sound like a fool, but when you say table cream are you referring to half and half? Usually I use heavy whipping cream. Just want to be sure before I put this recipe to task.

Always happy when you drop in for a visit. Around here when it gets warm out I seem to live outside and don't do much cooking in the house. I just use the BBQ for just about anything.

Guess what, I have been making this mushroom soup with the same 'dreadful techniques' for the passed forty+ years, as has my Mom and my Grandma and never has this soup not thickened, nor has it ever curdled once the yogurt and cream went in. As you so kindly remarked, a novice cook needs to be careful not to heat the soup too long once cream and yogurt are added...I will add that into the hub...

I really love it when I get kind and nicely worded attacks (woops) I meant to say comments like yours.

Dreadful technique. If you don't gently cook the flour in the fat (oil) before you add the stock, it will clump and not properly thicken the soup, and taste pasty and raw. Also warn neophytes not to boil the mixture with yogurt and cream added, else it curdle into a fine mess. Learn the basics before you become an 'expert' who teaches others uninformed habits.

Alekhouse, so great that you stopped in for a visit. Mushroom soup is my absolute favorite soup. I make it regularly now as my kids were never too fond of it. One of the ups now that they have flown the coop is that I can have for dinner what I like, when I like.

Lily Rose so glad you stopped in. I don't much care for canned mushroom soup but I always have some in the cupboard. Mushrooms are almost a staple at my house I buy them every week. I had company on Sunday and made filled portabello caps.That gave me quite a few extra stems and rather than let them go to waste I made my soup yesterday it turned out so yummy again I thought I would share my recipe.
